You will see that I make most of my tarts in the summertime. I love arranging a tall mountain of seasonal fruits atop a luscious pastry cream or whipped cheesecake filling inside the perfect sablé crust. Though I make most of my tarts in the warmer months, it doesn’t mean winter fruit aren’t perfect for tarts. I love dedicating a full afternoon to make delicate apple roses for the Pink Pearl Apple Custard Tart and any fruit would be just as lovely for this End-of-Summer Tart with a chocolate tart shell.
